摘要
Abstract
Among the polysaccharide surfactants,octenyl succinic polysaccharide esters were received widely attention for researchers due to its excellent emulsifying,thickening,and film forming properties,and broadlyapplicated in the food industry as emulsion stabilizer,thickener,and encapsulating agent.In this paper,the preparation,structure determination,physicochemical and functional properties,and applications in food industrial were reviewed.Moreover,the prospects of further study on octenyl succinic polysaccharide esters were discussed.关键词
