摘要

Abstract

Coix seed oil was microencapsulated with four different wall materials includingβ-cyclodextrins,modified starch HI-CAP100,soybean protein isolated (SPI) and gelatin.Then single factor experiment was applied to study thewall material ratio,wall core ratio,wall material content and emulsifier on the effect of microencapsulation rate.The optimum ratio of the wall material was determined by L9 (34) tests.The results showed that the optimal formula of coix seed oil microcapsule was SPI isolates 5%,core/wall radio 60%,wall material concentration 30% and 1% emulsifier.The encapsulation rate could reach to 78.52% under the optimized conditions.
