摘要

Abstract

[Objective] To determine the aluminum content in saled fried bread stick and residents' consumption to provide basis for the estimation of dietary aluminum exposure level.[Method] We selected 158 samples for supermarkets and fast food shops using random sampling method.Residents' aluminum intake was calculated by according to the national standard method.[Result] Among 158 samples,19samples was qualification.The rate of qualification was 12% and aluminum mean content was 247.3mg/kg,the median value of 178.2 mg/ kg.There was no significant difference between sampling sites.There was no significant difference between different district.The mean intakes of aluminum in Xianyang city residents was 6.7 mg/d.There were no significant differences between regions,while there was a significant statistic difference between gender.[Conclusion] The aluminum content of saled fried bread stick in Xianyang exceeded the allowed limit.The results indicated the residents intaked aluminum through saled fried bread stick.Residents of long-term eating twisted cruller can cause aluminum toxicity.Measures should be taken to reduce the aluminum content,the supervision and management departments should be strengthened.
