Abstract
Natural carotenoid is a kind of very important food coloring additive,nutrition enhancer and antioxidants.In this article,we summarized the physic-chemical characters and physiological functions of lutein,zeaxanthin,astaxanthin,lycopene and β-carotene,as well as the processing technique of them.We demonstrated a variety of main formulations and their applications in the product development.The huge market value and the promotion space of carotenoids are also described.关键词
