摘要
Abstract
Bacteria form surface-attached biofilm communities in nature.Incontrast to free-living cells,bacterial cells within biofilms resist sanitizers and antimicrobials.Whilebuilding biofilms,biofilm bacteria can cause arange of problems to food processing including reduced heat-cold transfer,clogging water pipelines,food spoil age and they may cause infections among consumers.In this paper,the structure,formation mechanisms,detection methods and control strategies of the bacterial biofilm were reviewed,the effect of ultrasound on the bacterial biofilm in particular were introduced,and the future research directions were indicated.关键词
