含铝食品添加剂标准在面制品行业执行情况
Implementation of Food Additives Standards Containing Aluminum in Flour Products
摘要
Abstract
[Objective] To understand awareness and use of ammonium aluminum sulfate,aluminum potassium sulfate in flour products to provide reference for revision.[Method] Simple random sampling method was used to investigate the employee from catering units and law enforcement units.The problems encountered by practitioners were proposed in the survey.[Result] The number of valid questionnaire screened from 256 catering units was 514.The awareness rate of standard was 64.9%.Totally 56% of the respondents knew food additives containing aluminum to adjust the scope on July 1,2014.The single factor analysis showed the age and type of catering unit were the main influencing factors of the awareness rate among the employees.There was no statistical differences on the awareness rate by gender,education level and working years.[Conclusion] Low awareness rate was got from employees who did not know which flour products could use food additives with aluminum.Standard should be propagandizd and implemented by a variety of ways.关键词
