摘要

Abstract

A new method for the preparation of DHA microcapsules was introduced.DHA microcapsules were prepared by complex coacervation and double embedding technology.Using gelatin and Arabia gum as wall material and DHA oil as core material,DHA microcapsules were prepared by complex coacervation.Double embedding technology was the method that the wet DHA microcapsules was embedded by the wall material and reinforced on the base of the old wall material,some tears and holes of the wall were improved in the spray drying process,which can improve the storage stability and shelf-life.High quality products of microcapsules were got by studying the embedding rate and yield.There are many factors affecting rate of the embedding and yield of micro encapsulation.It was studied the ratio of core material to wall material,the ratio of gelatin and Arabia gum and the process of double embedding technology to optimize the yield of microcapsules and the embedding effect.The results showed that the optimum formula of the complex coacervation DHA microcapsules were the core material ratio of 1 ∶ 2 and the ratio of gelatin and Arabia gum of 1 ∶ 1,and the modified starch was chosen as the wall material of double embedding technology.
