摘要

Abstract

The study of this paper focused on the optimum condition of natamycin loaded zein film-forming and the effect of the film on preservation of apple.The film was prepared by tape casting method using zein,natamycin,glycerol and ethanol as the raw materials.The results showed that the optimum conditions were:the ratio of solid to liquid was 1 ∶ 10 (g/mL),the content of natamycin was 0.05%,the concentration of glycerin was 20%.Under these conditions,the tensile strength of the film reached to 2.89MPa,and the ligh transmittance was 6.2%.Compared with the control group,the treatment of natamycin loaded zein film could reduce the weight loss rate,browning degree,hardness,respiration rate,total acid,and loss of sugar and ascorbic acid,during storage.
