Advances in Bioactive Functions of Milk Proteins
摘要
Abstract
Milk and colostrum are recognized as an important source of natural bioactive substances with high nutritional and functional values.Casein and whey protein are the major proteins in milk and together with numerous bioactive peptides derived from them play significant physiological roles in young animals and human beings,and their biological properties have been of increasing research interest.The functions of several major bioactive milk proteins are summarized in this review.关键词
