Recent applications of cyclodextrins in food industry
摘要
Abstract
A hollow truncated cone of cyclodextrins enables cyclodextrins to form host-guest complexes with numerous lipophilic compounds which are more and more widely used in food industry.This paper summarized the research progress on cyclodextrin including recent applications of cyclodextrin complexes and'empty'cyclodextrins in dietary fiber,oil in water emulsions,cholesterol removal,and resistance to starch retrogradation in foods.The regulations for cyclodextrins used as food additives in food processing was also discussed.More research studies have been performed on the polymer of cyclodextrin and its derivatives.The ability of cyclodextrin combining with polymer to prepare hydrogel,nanoparticles and micelles will have more valuable applications in future food industry.关键词
