摘要

Abstract

In this paper,the preparation of chitooligosaccharides by chitosan hydrolyzed with constitutive chitosanase was studied.The chitooligosaccharides yield (mg)was the index,and hydrolysis pH,hydrolysis temperature (℃),substrate concentration (%)and hydrolysis time (min)were independent variables.On the basis of single factor experiment,the optimum hydrolysis process was determined by orthogonal experiment and the best conditions were:hydrolysis pH 7,hydrolysis temperature 50℃,substrate concentration 1%,hydrolysis degradation time 90 min,the production of chitooligosaccharide was 5.476 mg.
