Review on the ultra-high pressure technology and its application progress in extracting plant active ingredients

Abstract
Ultra-high pressure (UHP) or high hydrostatic pressure (HHP) treatment is an emerging food technology,which is a hotspot research area among food high technology field.This paper briefly explains part of the application principles of ultra-high pressure,and summaries the preliminary research and applications of using UHP to extract natural active ingredients from plants in recent years at home and abroad.关键词
