摘要

Abstract

γ-aminobutyric acid (GABA)is a functional component which extensively exists in cereals,fruits and animal brains.It presents various functional activities including relieving anxiety,lowering blood pressure and regulating body weight,ect.The process of plant metabolism (germination) and microbial fermentation can effectively enrich the content of GABA in food though it is generally low in natural foodstuffs.In this paper,the technology process of GABA enrichment in cereals were reviewed.
