摘要

Abstract

Chitosan is treated by deacetylated chitin whichextracted from marine shrimp and crab shells andis the only cationic animal fiber and alkaline polysaccharide found so far.In 2013,chitosan was approved by the US Food and Drug Administration (USFDA) as a "generally recognized safety" (GRAS) food additive.As a food additive,chitosan has may functions such as thickening,coating,clarifying,antioxidation,flavor improvementand emulsifying.Among these functions,chitosan's usage as a coating agent to preserve fruit andvegetables got a lot attention.It has a good film-forming capacity and its semi-permeable membrane surface can adjust the frnitandvegetable's internal environment and delay the respiration rate andweight loss.Therefore,it maintains the overall quality and extend the shelf life.The purpose of this review is to summarize the research progress of chitosan used as a coating agent in protecting the overall product quality of fruit andvegetableproducts.
