Abstract

The objective of this research was to simulate the lethality of Listeria monocytogenes during pasteurization of tinplate canned salmon roe by hot water immersion.A 2D unsteady heat transfer model was developed to simulate the temperature distributions within the canned salmon roe.Thermal diffusivity of salmon roe was measured by using analytic solution,and then a Matlab simulation program based on finite difference analysis was developed to solve the heat transfer model.Finally,lethality of Listeria monocytogenes during pasteurization was calculated by the General Method,and biologically validated with salmon roe inoculated with freshly bacteria.The results of Matlab simulation indicated that the simulated temperature histories were in close agreement with the experimentally observed curves,both at the heating process and cooling process of the samples.The calculated bacterial reductions by the General Method were generally 0.5~2logs lower than those observed values when the heating time was short.The theoretical calculation was more accurate when the heating time was long and the total inactivation was high[>4 lg(CFU/g)].In general,the result of numerical simulation for calculating the log reduction was more conservative than that in the experimental observations.Therefore suitable designing need to be processed to ensure the safety of products and to reduce the incidence of foodborne listeriosis associated with salmon roe.
