摘要

Abstract

Taking the contents of flavonoids and polysaccharides,including the extract yield and comprehensive score as standard,the data were analyzed by comprehensive evaluation method,using the response surface to optimize the enzymolysis conditions of the instant tea of Cyclocarya paliurus.The results showed that the optimum conditions were established as follows:using 0.840% cellulose as hydrolysis solvent,enzymolysis temperature 49 ℃,enzymolysis 29 minutes with liquid-to-solid ratio 22∶1 (mL/g),the content of flavonoids was 15.14 mg/g,the content of polysaccharides was 11.88 mg/g,the extracts yield was 23.03%,and comprehensive score was 99.99.
