Abstract

[Objective] To explore the effects of menu nitrition labeling on energy,fat and sodium purchase of restaurant diners.[Method] Totally 2 restaurants of a chain Chinese restaurants in Hangzhou city were selected,1 was intervention restaurant and 1 was control restaurant.We weighed the ingredients and calculated energy,fat and sodium contents of each dish on the menu.Menu nutrition labeling was used for 3 months in intervention restaurant.Two-days ordering records (1 working day,and 1 weekend day) were respectively collected before and after the intervention in the 2 restaurants.In every selected day,we randomly chose 20 records for 2 diners-table,20 records for 4 diners-table,10 records for 6 diners-table,and 400 records in total.Difference in per capita purchase change of energy,fat and sodium was analyzed among 2 restaurants.Effects of dining time and diners' number on energy,fat and sodium purchase in intervention restaurant was also estimated.[Result] Totally 175 dishes were collected,which provided 709kcal energy,40.lg fat and 1 876.2mg sodium on average.Effects of menu nutrition labeling on energy and fat between intervention and control restaurants showed no significant difference (P >0.05).Sodium purchase in intervention restaurant reduced 450.7 mg/person · meal,and showed significant difference with that in control restaurant (P <0.05).Change of energy and fat purchase was found statistically different among the diners' number groups (P < 0.05),for which,capita purchase decreased 297kcal energy and 17.4g fat in 4 diners-table group,and 243kcal energy and 6.0g fat in 6 diners-table,while increased energy and fat purchase was found in 2 diners-table group.Dining time and diners' number both showed no effects on sodium purchase (P >0.05).[Conclusion] Menu nutrition labeling may help reduce sodium purchase of restaurant diners.Diners' number has effect on purchase change of energy and fat.
