摘要

Abstract

In this paper,the hydrolysates from scallop(Patinopecten yessoensis)female gonad were prepared by using alcalase,neutrase,flavourzyme and papain.Maillard reaction products were further obtained from the system of ribose and hydrolysates from scallop(Patinopecten yessoensis)female gonad.The antioxidant capacities of maillard reaction products were evaluated by DPPH radical scavenging assay and linoleic acid peroxidation assay.The results showed that alcalase had the better hydrolysis effect than the other enzymes.The hydrolysis degree and TCA soluble peptide yield reached 24.16% and 20.79%,respectively,after hydrolysis for 3 h.The Maillard reaction products of scallop female gonad hydrolysates-ribose showed the stronger antioxidant abilities at pH7 of by using DPPH radical-scavenging activity and anti-linoleic acid peroxidation capacity as the indicators.By comparing the half inhibition concentration(IC50),the antioxidant capacity of Maillard reaction products was significantly enhanced as comparison with the hydrolysates and ribose (p < 0.05),but weaker than butylated hydroxytoluene (BHT).The results suggest that the Maillard reaction products of scallop female gonad hydrolysates-ribose possess antioxidant capacity,having potential value for exploitation.
