低温贮藏对蚕豆鲜荚品质的影响
Effect of low-temperature storage on quality of broad bean fresh pod
摘要
Abstract
In order to study effect of low-temperature on quality of broad bean fresh pod,set different low-temperature storage (0,4,8 ℃)by studying freezing point and measured its activity of PPO,decay index and mass loss rate during storage at regular intervals.The results indicated that freezing points of broad bean pod were-0.8 ℃;the effects of the treatment of 0 ℃ on PPO activity,decay index,mass loss rate and color's change was less than the rest of treatments,the effects of the treatment of 0 ℃ on chlorophyll content was higher than the rest of treatments.The indexes of hardness of broad bean pod by the treatment of 0 ℃ were better than others.Effects of different low-temperature treatments on Vc had no significant (p > 0.05).The broad bean fresh pod were suitable for storage at 0 ℃.关键词
