摘要

Abstract

To optimize enzymatic extraction process of polysaccharide from okra,experiments of single factor were conducted.Then under the condition of solid-liquid ratio of 1 ∶ 30,pH5.5,the ratio of pectinase to cellulase 1 ∶3,3 factors and 3 levels Box-Behnken central composite test was designed to study the effect of compound enzyme amount,extraction temperature and extraction time on the extraction rate of okra polysaccharide.The optimum technological parameters of enzymatic extraction of okra polysaccharide were:extraction time 73min,extraction temperature 62 ℃ and compound enzyme amount 0.56%.Under the above condition the predictive extraction rate of polysaccharides is 6.72%.The actual testing value is 6.41%,and the relative deviation from the predicted maximum response value is 4.61%.
