Research Progress on the Toxicity of Acrylamide
摘要
Abstract
Acrylamide is an important chemical material, but also one of the byproducts of the Maillard reaction, widely found in hot processed foods. Its toxicity mainly includes neurotoxicity, reproductive toxicity, genotoxicity, immunotoxicity and carcinogenicity, among which neurotoxicity is confirmed in the human body. In this paper, the metabolism, toxicity, mechanism and toxicity mitigation of acrylamide were reviewed, and the future research direction of acrylamide was also discussed.关键词
