酸性食品模拟物对金属罐甲醛迁移的适用性研究
Applicability of acidic food simulants for formaldehyde migration of metal cans

Abstract
In this study,the HPLC method was established to determine the migration of formaldehyde in food simulates and the con-tent of formaldehyde in real food.The corrosion of 4%(volume fraction)acetic acid on coated metal cans was investigated under 60℃and 10-day migration conditions.The typical volatile substance formaldehyde in epoxy coatings was used as the research object,and six food simulants to simulate the applicability of 21 acid foods in metal cans.Results showed that 19%of the metal cans filled with acetic acid solution corroded under the long-term storage conditions(60℃,10 days)of the simulated foods.For the empty can samples in which acetic acid solution corrosion occurred,5 g/L citric acid was recommended as the food simulant for empty cans with such products.For the empty can samples without acetic acid solution corrosion,the use of 3 g/L and 5 g/L citric acid and 10%(volume fraction)of ethanol as food simulants would lead to underestimation of formaldehyde content in more than 80%of acidic canned foods,at this time,4%(volume fraction)of acetic acid was recommended as a food simulant for formaldehyde migration testing in empty cans for such products.关键词
