为了研究不同月龄贵州黑山羊的生产性能、屠宰性能及肌肉和脂肪组织中膻味脂肪酸的含量,选择同一饲养水平下的 3、6、12 和24 月龄贵州黑山羊公母各 40 只进行生长性能测定,随机选取不同年龄段公母羊各 5 只进行屠宰性能分析,并对不同月龄贵州黑山羊公羊的不同肌肉和脂肪组织中膻味脂肪酸含量进行测定分析.结果:不论公羊还是母羊,不同月龄的贵州黑山羊在体重、体高、体长、胸围等指标上均存在显著差异(P<0.05),且均随着月龄增大而增大,其屠宰性能各项指标也随月龄增大而逐渐增加.对肌肉组织中脂肪酸分析发现,不同月龄贵州黑山羊背最长肌和腿肌中3 种膻味脂肪酸4-甲基辛酸(MOA)、4-乙基辛酸(EOA)和4-甲基壬酸(MNA)含量均呈现出随月龄增加而增大的趋势,3种膻味脂肪酸均在 24 月龄时含量最高.在皮下脂肪中,MOA和MNA的含量均在24 月龄最高,均极显著高于其他月龄,而EOA含量在 12 月龄最高,且极显著高于其他月龄;在脂肪组织中,3 种膻味脂肪酸的含量均在 24 月龄最高,极显著高于其他月龄.本研究结果说明,不同月龄贵州黑山羊生长和屠宰性能有较大差异,且膻味脂肪酸会随着年龄的增加而不断形成和沉积.

This study was to determine the production performance,slaughter performance and content of mutton fatty acids in muscle and adipose tissue of Guizhou Black goats at different months of age.In the experiment,80 Guizhou Black goats(40 males and 40 females)aged 3,6,12,and 24 months were selected under the same feeding level for growth performance measurement.Five males and five females of the goats of different ages were randomly selected for slaughter performance analysis.The content of mutton fatty acids in different muscles and adipose tissues of the male goats at different months of age were measured and analyzed.The results showed that there were significant differ-ences in body weight,body height,body length,chest circumference,and other indicators between the males and females(P<0.05),and these indicators all increased with higher months of age of the goats.The various indicators of slaughter performance of the goats showed the same trend.The analysis of fatty acids in the muscle tissue showed that the contents of 4-methyloctanoic acid(MOA),4-ethyloctanoic acid(EOA)and 4-methylnonanoic acid(MNA)all showed a trend of increasing with higher months of age of the goats.The contents of the three types of mutton fatty acids in the tissue were the highest at 24 months of age of the animals.In the subcutaneous fat of the goats,the contents of MOA and MNA were the highest at 24 months of age,both significantly higher than those at the other months of age;however,the content of EOA was the highest at 12 months of age,and significantly higher than that at the other months of age.In the adipose tissue of animals,the contents of the three types of mutton fatty acids were the highest at 24 months of age,which was significantly higher than those at the oth-er months of age.The present study indicated that there were significant differences in growth and slaughter performance among Guizhou Black goats at different months of age,and the formation and deposition of mutton fatty acids continued with the increasing age of goats.
