Abstract

In order to improve the stability of vanillin by polysaccharide-protein interaction and to investigate the inhibitory effect of the composite nanocarrier on Listeria monocytogenes and E.coli,a vanillin-loaded composite nanocarrier of corn bran arabinoxylan(AX)and zein was prepared.Two crude polysaccharide fractions of corn bran were obtained by precipitating with 80%and 90%ethanol.Four fractions(F80-1,F80-2,F90-1,and F90-2)were subjected to anion-exchange chromatography purification.The monosaccharide composition of the fractions was determined using gas chromatography.It was found that the total content of arabinose and xylose in each fraction was 67.41%,76.12%,77.16%,and 84.89%,respectively,and the encapsulation rate of vanillin in the composite nanoparticles of the four fractions was 81.18%,69.36%,86.80%,and 88.48%,respectively.The vanillin encapsulation and the intermolecular interaction in the composite nanocarriers were verified by fluorescence spectrometry and differential scanning calorimetry(DSC).Bacterial inhibition experiments showed that F80-2 composite nanocarriers were most effective at inhibiting Listeria monocytogenes,and F90-2 composite nanocarriers were most effective at inhibiting E.coli.
