Abstract

The antioxidant activity and hypoglycemic activity of polysaccharides extracted from cilantro were studied.The antioxidant activities of cilantro polysaccharides were evaluated by DPPH·and ABTS+·radical scavenging abilities and total antioxidant capacity,and hypoglycemic activities were evaluated by its inhibitory effect on α-amylase and α-glucosidase activities.The results showed that with the increase of concentration of cilantro polysaccharide extract,its total reducing capacity and free radical scavenging rate increased.When cilantro polysaccharide mass concentration was 2 mg/mL,its scavenging rates of DPPH and ABTS+ radicals were 61.32%and 70.76%,respectively,indicating it had a strong antioxidant activity.In addition,the inhibition rates of α-amylase and α-glucosidase also increased with the increase of cilantro polysaccharides concentrations.When the concentration of cilantro polysaccharides was 6 mg/mL,the inhibition rates of these two enzymes could reach to 49.01%and 64.76%,respectively.The results showed that the polysaccharides had certain hypoglycemic activity.Therefore,cilantro polysaccharide can be used as a natural antioxidant and hypoglycemic substance.The study provides a theoretical basis for the development and utilization of Cilantro in food,medicine and health care products.
