Research progress on the formation and regulation of heterocyclic amines compounds in aquatic products
摘要
Abstract
The amino acids,glucose and creatine(creatinine)contained in the muscle tissue of aquatic products can generate heterocyclic aromatic amines(HAAs)during the heating processing,and increase the risk of cancer in humans when consumed in large quantities.This paper briefly reviewed the classification,formation mechanism and distribution of HAAs in aquatic products,and focused on the regulation of HAAs in aquatic products,aiming to provide theoretical references for the improvement of the safety of aquatic products.关键词
