摘要

Abstract

A solid drink with antioxidant function was developed by extracting,concentrating and drying the raw materials of lily,jujube,wheat and licorice,which had the same origin as food and medicine.The dry paste rate and total saponin content were used as the indexes,the extraction process was selected by single factor and orthogonal test,and optimized by the response surface method combined with fuzzy mathematical sensory evaluation.Antioxidant activity of the finished product was studied.The optimal preparation process of lily composite solid beverage:material-liquid ratio 1∶14,decoction 80 min,extraction three times,concentrating and drying to dry base powder with 20%maltodextrin,0.2%citric acid,and 10%sucrose.IC50s of the composite solid beverage against DPPH and ABTS radicals were 0.35 and 0.081 mg/mL,respectively,indicating good in vitro antioxidant activities.This product had uniform particles,uniformed yellow-brown color after brewing,sweet and sour taste,harmonious aroma,it has potential market application prospects.This study can provide a reference for the product development and utilization of lily and other medicinal and food herbs and in-depth research.indicating good in vitro antioxidant activities.
