Abstract
The study compared the effects of ingredients such as meat,fruits and vegetables,and grains,as well as dietary supplements such as vitamins and proteins,on the calcium holding capacity of three types of casein phosphopeptide products in infant and young children's complementary foods.The results showed that rice and wheat had a certain adverse effect on calcium-holding ability of casein phosphopeptides in infant and young children's complementary foods.However,the amount of rice and wheat within a range of 50%~85%did not significantly change calcium-holding ability of casein phosphopeptides.Adding more than 3%of meat and vegetables significantly reduced the calcium-holding ability of casein phosphopeptides.20 mg/kg niacinamide decreased calcium-holding ability of casein phosphopeptides in infant and young children's complementary foods;while other vitamins,whey protein,and soy protein did not have significant effects.Further analysis revealed that fats and proteins in meat ingredients,as well as phenolic compounds in fruit and vegetable ingredients,might be key factors affecting the calcium holding capacity of casein phosphopeptides.This study has certain guiding significance for clarifying the factors that affect the calcium holding capacity of casein phosphopeptides in infant and young children's complementary foods,in order to better exert their effects.关键词
