富含谷胱甘肽酵母制品在葡萄酒酿造中的应用进展
Advances on the application of glutathione-enriched inactive dry yeast derivatives during winemaking
摘要
Abstract
During winemaking process,problems of sluggish fermentation,oxidation,and loss of aroma may occur.As a Inactive yeast preparation produced from active yeast,glutathione-enriched inactive dry yeast derivatives,g-IDYs can release large amounts of Glu-tathione in wine and achieve positive results such as improvement in fermentation rate,antioxidant capacity,flavor profile,and reduced SO2 usage.Currently,there are various of g-IDYs products.However,due to different content of active ingredient and unclear mechanisms of action during vinification,effective application can be difficult.We gave a brief introduction of main active ingredients,application pro-gress,working mechanisms and measurement methods of g-IDYs products,to provide reference to precise application of g-IDYs products.关键词
