摘要

Abstract

Lipids,as molecules with a complex structure and diverse physical and chemical properties that are closely related to phys-iological health,are an important part of various metabolites and have unique biological functions,especially in maintaining physiological homeostasis.For a long time,due to the lack of advanced and reliable detection methods,little is known about the relationship between phenotypes and mechanisms of action related to lipid metabolism.The biological significance of lipids has driven the development of the study of lipids as a discipline.Lipidomics is a branch of metabolomics that studies molecular lipids in cells,tissues,and organisms.The introduction of lipidomics contributes to the comprehensive analysis of the biological roles of lipids in metabolic pathways and networks.At present,there have been a large number of studies using lipidomics to evaluate domestic and livestock products.Therefore,this paper re-viewed the application of lipidomics in the evaluation of livestock meat products,providing a reference for the application of lipidomics in the field of animal husbandry and providing a basis for further research on the regulation of feed nutrition on the nutritional value of live-stock meat products in the future.
