Research progress of exopolysaccharide from Lactiplantibacillus plantarum
摘要
Abstract
Lactiplantibacillus plantarum is a kind of traditional lactic acid bacteria distributing in different environments such as vege-tables and fruits.It can synthesize a series of exopolysaccharides(EPS)with different structural characteristics and biological activities,which is of great significance for the improvement of food quality and function.In this paper,the research progress of EPS from L.planta-rum was reviewed from the aspects of biosynthesis,separation,purification and yield optimization,and the latest research on the struc-ture,rheological properties and biological activity of EPS from L.plantarum was also summarized.关键词
