Abstract
This experiment was to explore the effect of palm kernel cake oligosaccharides(PKCOS)on the proliferation and antibacterial function of lactic acid bacteria in vitro,so as to provide some theoretical basis and data reference for the scientific compatibility of innovative probiotics and prebiotics,as well as the development of high-quality synbiotic products.The candidate probiotics were determined according to the number of viable bacteria,pH and OD600 nm from the 7 strains of Lactobacillus retained in the laboratory,and they were cultured in dif-ferent proportions(1%,3%,5%,7%)with PKCOS instead of glucose as carbon sources.Then,the antibacterial effects of the candidate probiotics cultured in three groups,including the sugar-free group,the whole glucose group,and the 3%PKCOS substitution group,on Escherichia coli and Staphylococcus aureus were explored.The results were as follows:L.plantarum LY19 was a candidate probiotic.The opti-mal substitution ratio of PKCOS for glucose culture L.plantarum LY19 was 3%.Compared with the sugar-free group,in the whole glucose group and the 3%PKCOS substitution group,the value of viable bacteria was also 9.35,and the lactate yield was 120 mg/mL,but there were no significant difference between the two groups.Compared with the whole glucose group,the inhibition zone of L.plantarum LY19 against Escherichia coli and S.aureus was significantly increased after 24 h of culture in the 3%PKCOS substitution group.In conclusion,when 3%PKCOS replaced glucose as the carbon source,the antibacterial function of L.plantarum LY19 on E.coli and S.aureus can be en-hanced.关键词
