固体食品的充填是固体食品包装过程中亟待解决的关键技术问题,在保障固体食品产品均一性、提升食品品质等方面具有显著优势.文章综述了固体食品充填技术及装备的研究现状,包括固体食品的物料特性以及充填要求、充填技术分类、充填装备的主要原理与结构等方面,并对固体食品充填技术及装备的发展趋势进行了分析,提出了研究方向.

The filling of solid food is a key technical problem to be solved in the process of solid food packaging.It has significant advantages in ensuring the uniformity of solid food products and improving food quality.This paper reviews the research status of solid food filling technology and equipment,including the material characteristics and filling requirements of solid food,the classification of filling technology,the main principle and structure of filling equipment,etc.,and analyzes the development trend of solid food filling technology and equipment.The research direction is proposed to provide theoretical basis and technical support for the development of solid food filling technology and the popularization and application of equipment.
