Effect of Straw Returning and Quicklime Amount on Morchella Quality

Abstract
Using a double-factor randomized block design,the effects of straw returning amount[0(A0),200 kg(A1),400 kg(A2),and 800 kg(A3)]and quicklime amount[0(B0),25 kg(B1),50 kg(B2),and 75 kg(B3)]per 667 m2 on sensory qualities(color and texture)and nutritional qualities(free amino acids,total phenols,crude polysaccharide and nutrient elements)of Morchella sextelata were studied.Differences in flavor and taste between different treatments were measured by electronic nose and electronic tongue,respectively.The effects of straw returning amount,quicklime amount and their interaction on nutritional qualities were explored.The results showed that within the experimental range,A3B1 resulted in morels showing higher crispness of pileus and stipe,freshness and saltiness(P<0.05),and lower bitterness(P<0.05)than the control(A0B0).Morels cultivated under A3B2 showed higher contents of total amino acids,indispensable amino acids,dispensable amino acids,umami amino acids,bitter amino acids,and sweet amino acids than morels cultivated under the control condition A0B0,and the increase proportions were 51.2%,51.2%,50.7%,60.9%,40%,and 45.4%,respectively.Morels of A0B1 had a higher total phenolic content(P<0.05)than the control.Morels of A1B1 contained higher levels of K,Ca,Fe,and Se(P<0.05)than the control.Principal component analysis showed that the flavor and taste of M.sextelata treated with different straw returning and quicklime amount was distinguished effectively.Both straw returning and quicklime amount regulated the nutritional qualities of M.sextelata,and the interactive effect between straw returning and quicklime was the greatest,followed by straw returning amount.This study provided a reference for the cultivation of Morchella under a rice-Morchella rotation mode.关键词
