Optimization of ultrasonic-assisted extraction of gingerol from ginger slag

Abstract
To improve the extraction efficiency of gingerol from ginger slag,this study optimized the ultrasonic-assisted extraction process using response surface methodology(RSM).Ginger slag,a by-product from Changyi ginger processing,was selected as the raw material.Single-factor experiments and RSM were employed to analyze the effects of ethanol concentration,material-to-liquid ratio,and ultrasonic time on the gingerol yield.The in vitro antioxidant activity of the extracted gingerol was further investigated.Results demonstrated that the optimal extraction recipe was as follows:ethanol volume fraction of 69%,material-to-liquid ratio of 1∶21(g/mL),and ultrasonic duration of 15 min.Under these conditions,the gingerol yield reached 1.45%.Additionally,the extracted gingerol exhibited significant concentration-dependent scavenging capacity against DPPH free radicals.This study provides a theoretical foundation for the optimized extraction and comprehensive utilization of gingerol from ginger slag.关键词
