食源性ACE抑制肽的制备方法及作用机制研究进展
Research Progress on Preparation and Mechanism of Action of Food-Derived ACE Inhibitory Peptides
摘要
Abstract
[Objective]To review the mechanism of action of ACE inhibitory peptides in the regulation of hypertension,preparation,isolation and purification,activity evaluation,structure-activity relationship and molecular simulation mechanism of food-derived ACE inhibitory peptides,in order to provide reference for further research and development of ACE inhibitory peptides.[Method]The paper adopted the literature method.[Result]The methods of extracting ACE inhibitory peptides from food materials mainly included enzymatic hydrolysis,fermentation,simulated digestion and synthesis.At present,the separation and purification technology of ACE inhibitory peptides has been relatively mature.Studies on the activity of ACE inhibitory peptides are mainly conducted in vitro and in vivo.Studies on the structure-activity relationship of ACE inhibitory peptides mainly focus on surface hydrophobicity,molecular weight and molecular conformation.Structure-activity relationships have been used to analyze the molecular mechanism of action of ACE-inhibiting peptides.[Conclusion]The studies on the antihypertensive activity and mechanism of food-derived ACE inhibitory peptide in vivo are not systematic and in-depth,and its structure-activity relationship needs to be further studied.The separation and purification process of ACE inhibitory peptides needs to be further improved,and the safety research of foodborne ACE inhibitory peptides and quality management in the produc-tion process need to be strengthened to ensure the safety and health of consumers.关键词
