Nutrient Analysis and Evaluation on Korla Pears in Xinjiang

Abstract
[Objective]To analyze and evaluate the content of organic acids,soluble sugars,amino acids,and minerals in Korla pears,and provide scientific basis for the rational development of Korla pears in Xinjiang in the future.[Method]A total of 90 samples of Korla pears from 30 different orchards in the Korla region were analyzed for their main nutrient content using the national standard method.The nutritional value was evaluated based on the Chinese Recommended Intake of Nutrients for Chinese Residents,ratio of amino acids(RAA),ratio coefficient of amino acids(RC),and score of ratio coefficient of amino acids(SRC).[Result]The content of organic acids in Korla pears ranged from 9.10 to 240 mg/100g,with malic acid(128mg/100g)being the highest followed by tartaric acid(46mg/100g),fumaric acid(26mg/100g),and citric acid(25mg/100g).The soluble sugar content ranged from 1 200 to 6 400 mg/100g,with fructose(4 993 mg/100g)being the highest and glucose(2 270 mg/100g)being the lowest.Korla pears contained rich minerals,among which K had the highest content(153.39mg/100g),followed by Mg(12.98 mg/100g),Ca(12.89 mg/100g),P(12.46 mg/100g),etc.Among the trace elements,Zn(0.791mg/100g)had the highest content,followed by Fe(0.443 mg/100g),Cu(0.098 mg/100g),etc.Compared with the representative value of pear in the Chinese Food Composition Table(6th Edition),the content of Ca,P,K,Na,Mg,Zn,and Mn elements in Korla pears was higher,and the difference was statistically significant(P<0.05).Korla pears contained 17 amino acids,among which Asp had the highest content(89.30 mg/100g),followed by Glu(21.3 mg/100g),Val(12.27 mg/100g),Leu(11.90 mg/100g),Ser(11.67 mg/100g),etc.The content of umami amino acids from high to low was DAA,SAA,BAA,and AAA.Compared with the representative value of pear in the Chinese Food Composition Table(6th Edition),the contents of Asp,Thr,Ser,Glu,Gly,Ala,Val,Met,Ile,Leu,Phe,Lys,His,and Pro were higher,and the difference was statistically significant(P<0.05).From the perspective of nutritional value analysis,the%RNI(AI)values of K,Zn,and Cu elements in Korla pears all exceed 20%,and the proportion coefficient of amino acids(SRC)was 68.9%,indicating that the types of amino acids in Korla pears were relatively complete and the proportion of es-sential amino acids was balanced.[Conclusion]K orla pears have rich content of organic acids,soluble sugars,amino acids,and minerals,and have high nutritional value.关键词
