摘要

Abstract

To investigate the differences of volatile aroma metabolites between summer grape fruits(SF)and winter grape fruits(WF)under a two-crop-a-year cultivation system,this study utilized headspace solid phase microextraction(HS-SPME)and gas chromatography-mass spectrometery(GC-MC)to analyze the volatile aroma metabolites of'Black Emperor'grapes using selected ion monitoring(SIM)mode.A total of 602 volatile compounds were detected in the summer and winter grape fruits,primarily consisting of terpenes,followed by esters,heterocyclic compounds and others.The contents of terpenes,ketones and hydrocarbons between WF and SF were significantly different,with 21 significantly different metabolites,including 10 up-regulated metabolites and 11 down-regulated metabolites.SF accumulates higher concentrations of terpene substances than WF,indicating that the metabolism of terpene substances in'Black Emperor'grapes responds to climate conditions in a variety-specific manner.Flavoromics analysis showed that fruit aroma and sweetness were the most critical aroma and taste of'Black Emperor'grapes,the relevant substances were(Z)-3-hexenal,benzaldehyde,citronellal,1-(2,6,6-trimethyl-1-cyclohexen-1-yl)-2-buten-1-one and 1-(4-methoxyphenyl)-2-propanone.This study enriches the new theory of volatile aroma metabolism in two-crop grapes,and provides reference basis for selecting research grapes with suitable aroma for two-crop-a-year cultivation.
