不同材质及结构蒸馏设备对米香型白酒的品质影响研究
Effect of distillation equipment with different materials and structures on the quality of Mixiangxing Baijiu

Abstract
Distillation process is a very important part in the process of Chinese Baijiu production.In order to improve the drinking comfort of Mixiangxing Baijiu,this study conducted qualitative and quantitative analysis of the main flavor substances in the basic Baijiu and combined with sensory evaluation,compared and analyzed the difference of the influence of different materials and structures of distill-ers on the quality of Mixiangxing Baijiu.It was founded that compared with the traditional stainless steel distillation,the basic Baijiu dis-tilled by copper distillation was relatively soft in taste.In terms of the structure of the distiller,the basic Baijiu obtained by the combination structure of lampshade reflow and Lynn arm was better.Considered the difficulty of equipment transformation in actual production,the de-sign of all stainless steel,lampshade reflow Lynn arm leaned down,and copper wire filled in the reflow was the most suitable scheme,which could increased the total amount of acid ester and obviously improved the quality of Mixiangxing Baijiu without affecting the main style and Baijiu yield.This study provided a reference for the selection or renovation of distilling equipment for Mixiangxing Baijiu.关键词
