摘要

Abstract

[Objective]Bee products,as a kind of natural food with rich nutrition and various biological functions,have attracted much research attention in the fields of nutrition and medicine in recent years.[Method]The nutritional composition,biological functions and microbiological research progress of bee products(including bee pollen,bee food and fermented bee products)were summarized by reviewing domestic and international literature.We provide an overview of the types and functions of microorganisms in bee products,especially those related to the fermentation process.[Result]The chemical composition of bee pollen and bee food,including carbohydrates,proteins,fats,vitamins,minerals,and bioactive substances.Secondly,the various biological functions,such as antioxidant,anti-inflammatory,and antimicrobial properties,possessed by bee pollen and bee food have a positive impact on human health.[Conclusion]As an important class of natural food,bee products offer broad application prospect for their use in the development of health food and pharmaceuticals.
