Difference Analysis of Fruit Quality of'Shine Muscat'Grape in Different Regions

Abstract
In this study,based on the same management scheme,'Shine Muscat'grapes from eight producing regions of Dalian(Liaoning),Huailai(Hebei),Beichen(Tianjin),Weinan(Shaanxi),Nantong(Jiangsu),Chengdu(Sichuan),Nanning(Guangxi)and Jianshui(Yunnan),were used as experimental materials to analyze the differences of sugar-acid ratio and aroma components.The results showed significant differences in the types,proportions and contents of aroma components in'Shine Muscat'grape from different producing regions.Principal component analysis indicated that'Shine Muscat'grapes from Nantong(Jiangsu)had the best overall quality.Specifically,samples from Jianshui(Yunnan)exhibited the highest soluble solids content(24.48%)and solid-acid ratio(11.59),with prominent aldehyde and ketone aroma profiles dominated by trans-2-hexenal and 2-octanone.The grapes from Dalian(Liaoning)were characterized by terpene and aldehyde compounds,particularly showing higher concentrations of linalool and trans-2-hexenal.Volatile aroma profiles from Beichen(Tianjin),Huailai(Hebei),and Nanning(Guangxi)were primarily composed of alcohols and terpenes,while those from Weinan(Shaanxi)and Chengdu(Sichuan)were dominated by aldehydes and alcohols.Statistical analysis indicated a negative correlation between annual sunshine hours and ester compounds in volatile aroma compounds,while soluble solids content showed positive correlations with both ester compounds and other aroma compounds.关键词
