Abstract

To monitor grass carp freshness,intelligent labels were prepared using agar and sodium carboxymethyl cellulose as matrices,cerium oxide nanoparticles as enzymatic catalysts,and 3,3ʹ,5,5ʹ-tetramethylbenzidine as indicator at varying CeO2 concentrations.Morphology,enzymatic catalytic activity,thermal stability,and mechanical properties of the labels were characterized.Results showed that at 0.5%mass fraction of CeO2 nanoparticles,the label exhibited uniform and dense surface,optimal enzymatic catalytic capacity,excellent thermal stability,tensile strength of 27.4 MPa,and elongation at break of 15%,representing the best comprehensive performance.During grass carp spoilage monitoring,hypoxanthine content increased from 0.21 mg/(10 g)to 2.36 mg/(10 g),while the label changed from colorless to blue with effective response.This study provides references for real-time aquatic product freshness monitoring.
