摘要

Abstract

This paper discusses the causes of high acid value in crude plant oils and finished oils,the regulatory limits of acid value indicators for crude plant oils,refined finished oils,and frying oils,as well as the limitations of current acid value detection methods.Research has found that the high acid value of crude oil from rice bran,corn,cottonseed,and palm is mainly due to the endogenous lipase activity and processing conditions of the oilseeds,while seabuckthorn oil is affected by the rich organic acids in the flesh.The current acid value detection methods have defects such as non-specificity and interference from matrix acidic substances,which may lead to deviations in food safety risk assessment.Therefore,it is necessary to establish acid value indicators in edible plant oil standards,and it is recommended to develop new methods for acid value determination with specificity.
