油橄榄果渣多酚基抗氧化膜的制备及其抑菌活性的测定
Preparation of olive pomace polyphenols-based antioxidant film and determination of its antibacterial activity

Abstract
To achieve the resource utilization of olive pomace polyphenols(OPP),a novel multifunctional composite film(CPC)based on OPP was developed.Using the solution casting method and the DPPH free radical scavenging rate as the indicator,film-forming process parameters were optimized through single-factor and orthogonal tests.The antibacterial activity of the composite film was assessed via the filter paper disc method.Fourier transform infrared spectroscopy(FTIR),scanning electron microscopy(SEM),and contact angle measurements were employed to characterize the film's internal structure and external morphology.Results indicated that with a mass fraction of 1.5%chitosan as the matrix,synergistically adding 8%OPP,3%curcumin,1%glycerol,and 0.9%acetic acid,the CPC achieved a high DPPH radical scavenging rate of 93.61%.The CPC demonstrated superior antibacterial efficacy against Gram-positive bacteria.An interpenetrating network structure was formed within the film between OPP and curcumin via π-π stacking and hydrogen bonding.The oil permeability of the composite film and pure chitosan film were 0.013%and 0.032%,respectively,while their water solubilities were 75.40%and 75.75%,the composite film shows a decrease compared to pure chitosan.The tensile strength and elongation at break were 5.78 MPa and 49.79%for the composite film,compared to 4.37 MPa and 43.54%for the chitosan film,showing a clear improvement.This research establishes a theoretical foundation for developing natural preservative packaging materials using OPP as a base material.关键词
