Abstract

To determine the optimal harvest time of'Petit Manseng'grape in Huailai region of Hebei province,fermentation experiments were conducted using grapes harvested at three maturity stages:Early-stage(late September),Mid-stage(mid-October)and late-stage(late October).The physicochemical parameter of the resulting wines were analyzed.Volatile compounds were quantified by headspace solid-phase microextraction combined with gas chromatography-mass spectrometry(HS-SPME-GC-MS)technology,and sensory evaluation was also conducted.The results showed that as the harvest time was prolonged,alcohol content,pH,and volatile acidity in sweet white wines significantly increased,while total acid contents decreased significantly.Delayed harvest significantly reduced the tartaric and malic acid contents but increased the citric and succinic acid levels.A total of 50 aroma compounds were identified in wine samples from different harvest times,with late-harvest wines exhibiting significantly higher total aroma compound content(15 057.69 μg·g-1)compared to early-and mid-harvest samples(P<0.05).Moreover,sensory evaluation of late-harvest wines overall outperformed other treatments.In summary,appropriately delayed harvest contributes to enhancing the flavor quality of'Petit Manseng'sweet white wines in the Huailai region.
