摘要

Abstract

The fig fruit,branches,leaves,and other parts contain ficin.Ficin can efficiently and specifically accelerate biochemical reactions,has good thermal stability,and has the functions of hydrolysis,coagulation,peroxidase-like,and decolorization,thus it is widely used in medical applications,food processing,inspection and testing,etc.However,there is still no comprehensive and systematic review on its research and industrial application.This paper comprehensively introduced the basic structure and properties of ficin and its influencing factors,summarized and evaluated its extraction methods,immobilization process,etc.,and elaborated its application research in different industrial scenarios,pointing out the existing shortcomings and deficiencies,in order to accelerate the development and application of ficin industry.
