Research Progress on the Application of MALDI-TOF MS Technology in the Identification and Diversity Analysis of Yeast in Wine
摘要
Abstract
This review focuses on the application of matrix-assisted laser desorption/ionization time-of-flight mass spectrometry(MALDI-TOF MS)technology in the identification and analysis of wine yeasts.The important position of yeast in wine making and the significance of strain typing were expounded.The structure,technical principle and application characteristics of MALDI-TOF MS were introduced in detail.The application results of MALDI-TOF MS in the identification of yeast strains and the dynamic monitoring of yeast community during fermentation in different producing areas were summarized.Compared with traditional identification methods,MALDI-TOF MS has advantages such as high accuracy and detection efficiency but there are challenges such as high sample preparation requirements and imperfect database.The review further prospects the aspects of optimizing sample preparation techniques,improving mass spectrometry databases,and providing references for the application of this technology in the wine making industry.关键词
