摘要

Abstract

Six red Vitis davidii Foex(spine grape)varieties widely cultivated in southern China were used as experimental materials.The phenolic profiles of different single-variety spine grape wines were characterized through qualitative and quantitative analysis of phenolic compounds and assessment of antioxidant capacity,combined with principal component analysis.The results showed that the phenolic composition and antioxidant activity of the six spine grape wines exhibited different characteristics.Among them,'Xiangzhenzhu 1'exhibited the highest total phenols,total flavonoids,and antioxidant activity;'Zhilan'had the highest contents of hydroxybenzoic acids,flavonoids,dihydrochalcones,flavanols,and anthocyanins;'Junzi 1'had the highest content of hydroxycinnamic acids;while'Junzi 2'had relatively low contents of various phenolic compounds and low antioxidant activity.The comprehensive evaluation scores for phenolic compounds in spine grape wines are ranked as follows:Zhilan>Junzi 1>Xiangzhenzhu 1>Xiangzhenzhu 2>Ziqiu>Junzi 2.The research results can provide theoretical support for the identification,development,and utilization of Vitis davidii Foex resources.
