摘要
Abstract
This study utilized Tibetan turnip root as the raw material and Pleurotus ostreatus GIM5.360 as the starting strain.By em-ploying a combination of single-factor experiments and orthogonal design, with polysaccharide content in the fermentation broth as the pri-mary indicator, the medium composition and fermentation conditions for the P.ostreatus-T.turnip root system were optimized to determine the optimal fermentation parameters.Subsequently,a mouse normobaric hypoxia tolerance model and a sodium nitrite poisoning model were established to evaluate the anti-hypoxic efficacy of the P.ostreatus fermentation broth. The experimental results indicated that the optimal medium composition was as follows, glucose 50 g/L,yeast extract 15 g/L,initial pH 6.5,T.turnip root concentration 20 g/L,and inoc-ulum size 8%.Under these conditions, the polysaccharide content in the P.ostreatus-T.turnip root fermentation broth reached 7.5 g/L,representing a 56.4%increase compared to the pre-fermentation level. In the normobaric hypoxia and sodium nitrite poisoning tests, the survival time of mice treated with the fermentation broth was extended by 34%and 25%,respectively,compared to the negative control group, and by 32.50%and 12.61%,respectively,compared to the positive control group(salidroside). These results confirmed the sig-nificant anti-hypoxic effect of the P.ostreatus fermentation broth. This study is the first to apply P.ostreatus fermentation technology to the development of functional products from T.turnip root.It provides novel insights and methodologies for the in-depth development and utili-zation of T.turnip root resources, holding significant theoretical importance and practical application value.关键词
