Abstract
A gas chromatography analysis method for determination of free fatty acids in paprika oleoresin was developed.The paprika oleoresin samples were esterified with boron trifluoride methanol solution(14%,w/w),extracted with heptane,salted out with saturated sodium chloride solution,cleaned up with N-propylethylenediamine and C18.The free fatty acids were determined by gas chromatography with hydrogen ion flame detector,and quantified by internal standard method.The results showed that the recovery rate of free fatty acids with the gas chromatographic analysis method was in the range of 91.0%~108.0%,the intraday precisions of free fatty acids ranged from 0.78%to 5.69%,and the interday precisions were below 8.85%.This gas chromatography analysis method is simple,rapid,accurate and reliable,which is suitable for the determination of free fatty acids in paprika oleoresin,and can be used as a quality control method in daily production.关键词
